The region between Bordeaux and Lyon is probably the most beautifull and charming one of France: Truffles, ducks, geese, caves and castles. Do you get trouble with your biles while thinking of goose liver pate, or do you get agoraphopia while thinking of caves or even rheumatism attacks while thinking of old historical castles? Then reading the following Ijnes could be posing a risk to your health. Even local physicians and pharmacist are hardly able to give you clear infomtation about riks and adverse reaction -unless you already know Perigord. It is a region in France which already had been described by the American man of letters, Hennry Mlller, as just been overwhelming, that "besides Greece nothing is as similar as paradise"... And if you know his books, you know that he almost knew any place in the world. I must admit the joumey to this place is not easy. Even people who know France very weIl have problems to find this region on a map. The first hint its Bordeaux at the Atlantic Ocean coast upsteam along the Dordogne to the town Bergerac. The capital city of Perigord Purpur. One of the most charming cities in this region. The downtown is just exciting. At least in the summer time. Performances, concerts. markets and a rich variety of restaurants with wonderfull gardens. And anything you will have on your plate will be a pleasur for any gourmets and gourmands. There is a truth in the old country saying: " you don't wash yourself in Perigord, you just eat... Well the first part Is hard to understand after you stay there a while, but the last part is just true. Here are one of the delicious food: truffled duck or goose liver pate (possibly shot Armagnac), Chabrol (herbs and vegetable soup topped up with red wine). Confit d'oie (goose confecte in Its own grease), salad with nut oil and walnuts. WeIl, they are not low-fat, but if you are afraid of you bile, pIease refer to the previous chapter
